It's essential to fuel your workouts with good carbohydrates; fruits, vegetables and yes even potatoes! Potatoes are a great, digestible source of muscle-fueling carbohydrates. According to the United States Potato Board, "one medium-sized potato contains zero fat, 26 grams of carbohydrates and only about 100 calories. Eaten with the skin, the potato is an excellent source of vitamin C and potassium and a good source of fiber." A baked potato topped with steamed veggies or salsa is a smart and easy choice to have the night before a race or after a tough workout.
