Asparagus Season!
It's asparagus season in my produce market. It went from $3.29 a bunch to $1.49 a bunch. It went from having dry woody cut bottoms to fresh milky looking ends. The heads went from separated with bad sandy highlights to tightly furled and all over sprightly green.
Asparagus is one of the easiest dinner veggies to prepare and it's super simple to sneak into things. I love it roasted the best but when it's sweet like this and so cheap I can't get enough of it.
5 Easy Ways to Work Asparagus into Your Favorite Recipes
- Add chopped asparagus any scrambled egg, omelet or frittata
- Add thinly sliced asparagus to pasta water just before you dump the noodles and you won't have to dirty another dish or work hard to sneak another vegetable onto the menu
- Add asparagus spears that have been tossed in oil, salt and pepper to the broiler pan or grill just before the steaks (or anything you're preparing) are done cooking
- Add asparagus spears that have been sliced lengthwise to any skillet meal just before it's done cooking. Place the lid on and cook another 3 minutes or until asparagus are steamed through.
- Throw cleaned asparagus on a dinner plate, cover loosely with plastic, place in microwave and cook 1-2 minutes for super fast steamed asparagus
